Mango cobbler is a baked dessert made with juicy mangoes layered over a soft, cake-like batter. It's sweet, slightly crisp on top, and full of tropical flavour.

⁠2 cups ripe mangoes (peeled & diced)
1 cup all-purpose flour
1 cup sugar
1 tsp baking powder
⁠½ tsp salt
¾ cup milk
⁠½ cup melted butter
1 tsp vanilla extract

​​Prep the Mangoes​

Peel and dice fresh mangoes. Use ripe ones for the best flavour and texture. Avoid using fibrous mangoes.

​​Preheat the Oven​

Set your oven to 180°C (350°F). Add the butter to your baking dish and let it melt in the oven while it preheats.

​​Make the Batter​

Mix flour, sugar, baking powder, and salt in a bowl. Add milk and vanilla extract gradually. Stir until smooth and lump-free.

Carefully pour the batter over the melted butter. Don’t stir, this layering creates the cobbler’s texture.

Evenly spread diced mangoes on top of the batter. As it bakes, the batter rises around the mangoes to form a golden, fruity topping.
